Another Mexican treat that most of us gringos know nothing about – chilaquiles (chee-la-KEE-lays).  Very basic breakfast or lunch food – fried corn tortillas cut into smaller pieces, add freshly made salsa (green or red) and queso fresco, and you have a nice high-calorie meal.  Strangely, my Mexican relatives all like it with coffee – I guess it’s like having tamales for breakfast.
